- 1 lb large raw shrimp, peeled and deveined
- 12 oz smoked andouille sausage, sliced into rounds
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 2 tbsp chopped fresh parsley
Instructions
- Heat the olive oil in a skillet over medium-high heat. Add the sliced sausage and cook until browned (about 5 minutes). Transfer to the slow cooker.
- Add the chopped bell peppers and onion to the same skillet and cook for 4-5 minutes until they start to soften. Add the garlic and cook for an additional minute.
- Scrape the vegetable mixture into the slow cooker with the sausage. Add the diced tomatoes, chicken broth, and Cajun seasoning. Stir to combine.
- Cover the slow cooker and cook on LOW for 6 hours or on HIGH for 3 hours.
- Add the raw shrimp to the slow cooker and stir gently. Cook on HIGH for another 20-30 minutes until shrimp are pink and cooked through.
- Stir in the fresh parsley before serving over cooked rice or with crusty bread.
Notes
For a creamier sauce, stir in 1/4 cup of heavy cream or coconut milk at the end. This dish freezes well for up to 3 months.
