Description

A flavorful blend of juicy shrimp and smoky sausage simmered in a rich Cajun sauce, perfect for busy weeknights.


Ingredients

  • 1 lb large raw shrimp, peeled and deveined
  • 12 oz smoked andouille sausage, sliced into rounds
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat the olive oil in a skillet over medium-high heat. Add the sliced sausage and cook until browned (about 5 minutes). Transfer to the slow cooker.
  2. Add the chopped bell peppers and onion to the same skillet and cook for 4-5 minutes until they start to soften. Add the garlic and cook for an additional minute.
  3. Scrape the vegetable mixture into the slow cooker with the sausage. Add the diced tomatoes, chicken broth, and Cajun seasoning. Stir to combine.
  4. Cover the slow cooker and cook on LOW for 6 hours or on HIGH for 3 hours.
  5. Add the raw shrimp to the slow cooker and stir gently. Cook on HIGH for another 20-30 minutes until shrimp are pink and cooked through.
  6. Stir in the fresh parsley before serving over cooked rice or with crusty bread.

Notes

For a creamier sauce, stir in 1/4 cup of heavy cream or coconut milk at the end. This dish freezes well for up to 3 months.
