Ingredients

  • 23 pounds beef (chuck roast or brisket), cut into chunks
  • 46 cups beef broth
  • Ramen noodles (fresh or dried)
  • 1/3 cup soy sauce
  • 2 tablespoons fresh ginger, minced
  • 4 cloves garlic, minced
  • Green onions, for garnish
  • Mushrooms, bok choy, or other vegetables
  • Drizzle of sesame oil
  • Optional: Dash of chili paste or Sriracha
  • Optional: Soft-boiled eggs
  • Optional: Seaweed sheets

Instructions

  1. Optional: Sear the beef on all sides in a skillet over medium-high heat.
  2. Transfer the seared beef into the slow cooker along with the beef broth, soy sauce, ginger, garlic, and vegetables.
  3. Set the slow cooker to low and cook for 6-8 hours.
  4. About 30 minutes before serving, add the ramen noodles (fresh or dry) and cook until soft.
  5. Serve in bowls and garnish with green onions, a drizzle of sesame oil, and soft-boiled eggs if desired.
