- 2–3 pounds beef (chuck roast or brisket), cut into chunks
- 4–6 cups beef broth
- Ramen noodles (fresh or dried)
- 1/3 cup soy sauce
- 2 tablespoons fresh ginger, minced
- 4 cloves garlic, minced
- Green onions, for garnish
- Mushrooms, bok choy, or other vegetables
- Drizzle of sesame oil
- Optional: Dash of chili paste or Sriracha

Instructions
- Optional: Sear the beef on all sides in a skillet over medium-high heat.
- Transfer the seared beef into the slow cooker along with the beef broth, soy sauce, ginger, garlic, and vegetables.
- Set the slow cooker to low and cook for 6-8 hours.
- About 30 minutes before serving, add the ramen noodles (fresh or dry) and cook until soft.
- Serve in bowls and garnish with green onions, a drizzle of sesame oil, and soft-boiled eggs if desired.
Notes
