Description
A flavorful and hearty Jamaican beef stew made with tender chunks of beef and a rich sauce, perfect for weeknight dinners.
Ingredients

- 2 lbs beef chuck (cut into 1-inch cubes)
- 2 tablespoons all-purpose seasoning
- 3 tablespoons olive oil
- 1 large onion (chopped)
- 4 garlic cloves (minced)
- 1-inch piece of ginger (grated)
- 2 carrots (sliced)
- 1 bell pepper (chopped)
- 1 can of diced tomatoes (about 14 oz)
- 4 cups beef broth
- 1 sprig of thyme (fresh)
- 2–3 whole scallions (chopped)
- Salt and pepper to taste
- Optional: Scotch bonnet pepper (for a kick!)
Instructions
- Marinate the beef by tossing it with the all-purpose seasoning, salt, and pepper. Let it marinate for about 30 minutes.
- In a large pot, heat olive oil over medium-high heat. Sear the beef until golden brown on all sides, then remove and set aside.
- Add onions, garlic, and ginger to the pot, sautéing until fragrant. Add carrots and bell pepper, cooking for about 5 minutes.
- Add the beef back to the pot along with tomatoes, beef broth, thyme, and scallions. Bring to a boil, then reduce heat to low and let it simmer for 1.5 to 2 hours.
- Taste and adjust the seasoning before serving. Serve over rice or with fluffy dumplings.
Notes
This stew pairs well with steamed rice, fried dumplings, or coleslaw for a refreshing crunch.
