Description

A flavorful and hearty Jamaican beef stew made with tender chunks of beef and a rich sauce, perfect for weeknight dinners.


Ingredients

  • 2 lbs beef chuck (cut into 1-inch cubes)
  • 2 tablespoons all-purpose seasoning
  • 3 tablespoons olive oil
  • 1 large onion (chopped)
  • 4 garlic cloves (minced)
  • 1-inch piece of ginger (grated)
  • 2 carrots (sliced)
  • 1 bell pepper (chopped)
  • 1 can of diced tomatoes (about 14 oz)
  • 4 cups beef broth
  • 1 sprig of thyme (fresh)
  • 23 whole scallions (chopped)
  • Salt and pepper to taste
  • Optional: Scotch bonnet pepper (for a kick!)

Instructions

  1. Marinate the beef by tossing it with the all-purpose seasoning, salt, and pepper. Let it marinate for about 30 minutes.
  2. In a large pot, heat olive oil over medium-high heat. Sear the beef until golden brown on all sides, then remove and set aside.
  3. Add onions, garlic, and ginger to the pot, sautéing until fragrant. Add carrots and bell pepper, cooking for about 5 minutes.
  4. Add the beef back to the pot along with tomatoes, beef broth, thyme, and scallions. Bring to a boil, then reduce heat to low and let it simmer for 1.5 to 2 hours.
  5. Taste and adjust the seasoning before serving. Serve over rice or with fluffy dumplings.

Notes

This stew pairs well with steamed rice, fried dumplings, or coleslaw for a refreshing crunch.
