Ingredients

- 4 cups chicken broth
- 2 cups water
- 2 garlic cloves, minced
- 1-inch piece of ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 packs ramen noodles
- 2 cups cooked chicken, shredded
- 1 cup bok choy or any leafy green
- 2 green onions, sliced
- 1 carrot, julienned
- Soft-boiled eggs (optional)
Instructions
- In a large pot, combine chicken broth and water. Add minced garlic, ginger, soy sauce, and sesame oil. Bring to a simmer over medium heat.
- Once the broth is bubbling, add the ramen noodles and cook according to package instructions (about 3-5 minutes).
- Add cooked chicken, bok choy, and carrot to the pot. Let it simmer for another 3-5 minutes until veggies are tender.
- Ladle the ramen into bowls. Top with sliced green onions and a soft-boiled egg if desired.
