Ingredients

  • 4 cups chicken broth
  • 2 cups water
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 packs ramen noodles
  • 2 cups cooked chicken, shredded
  • 1 cup bok choy or any leafy green
  • 2 green onions, sliced
  • 1 carrot, julienned
  • Soft-boiled eggs (optional)

Instructions

  1. In a large pot, combine chicken broth and water. Add minced garlic, ginger, soy sauce, and sesame oil. Bring to a simmer over medium heat.
  2. Once the broth is bubbling, add the ramen noodles and cook according to package instructions (about 3-5 minutes).
  3. Add cooked chicken, bok choy, and carrot to the pot. Let it simmer for another 3-5 minutes until veggies are tender.
  4. Ladle the ramen into bowls. Top with sliced green onions and a soft-boiled egg if desired.
