Description
A creamy, lemony linguine dish with silky smoked salmon and fresh spinach that’s easy to make and impressive to serve.
Ingredients
Scale
- 250 grams linguine
- 150 grams smoked salmon, cut into strips
- 1 cup heavy cream
- Juice of one lemon
- 2 cloves garlic, minced
- 2 cups spinach
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Chopped parsley, for garnishing
- Parmesan cheese, optional
- Capers, optional
Instructions
- Cook the linguine by boiling a pot of salted water. Add the linguine and cook until al dente, usually about 8-10 minutes. Reserve a cup of pasta water, drain the rest, and set aside.
- Heat olive oil in a large pan over medium heat. Add minced garlic and sauté for about a minute, until fragrant.
- Pour in the heavy cream and lemon juice. Stir and let it simmer for about three minutes until it thickens.
- Add the cooked linguine into the sauce. Toss to coat and then mix in the smoked salmon and spinach, using reserved pasta water for consistency if needed.
- Season with salt, pepper, and optional Parmesan. Plate and garnish with chopped parsley before serving.
Notes
Use high-quality smoked salmon for the best flavor. Don’t skip the lemon, as it brightens the dish!
