A hearty twist on comfort food, this Cowboy Pasta Salad combines pasta, fresh veggies, and zesty dressing for a delicious meal.


Ingredients

  • Rotini or penne pasta
  • Grilled chicken, beef, or beans
  • Feta or cheddar cheese
  • Bell peppers (mixed colors)
  • Corn (fresh or canned)
  • Red onion
  • Olive oil
  • Red wine vinegar
  • Chili powder
  • Salt
  • Pepper
  • Fresh herbs (cilantro or parsley)

Instructions

  1. Cook the pasta according to package instructions, salting the water well.
  2. Chop bell peppers, onions, and any other fresh veggies.
  3. In a small bowl, whisk together olive oil, red wine vinegar, and spices.
  4. In a large bowl, combine cooked pasta, protein, veggies, and dressing. Toss to coat.
