A hearty twist on comfort food, this Cowboy Pasta Salad combines pasta, fresh veggies, and zesty dressing for a delicious meal.
Ingredients
- Rotini or penne pasta
- Grilled chicken, beef, or beans
- Feta or cheddar cheese
- Bell peppers (mixed colors)
- Corn (fresh or canned)
- Red onion
- Olive oil
- Red wine vinegar
- Chili powder
- Salt
- Pepper
- Fresh herbs (cilantro or parsley)
Instructions
- Cook the pasta according to package instructions, salting the water well.
- Chop bell peppers, onions, and any other fresh veggies.
- In a small bowl, whisk together olive oil, red wine vinegar, and spices.
- In a large bowl, combine cooked pasta, protein, veggies, and dressing. Toss to coat.
- Chill in the fridge for at least 30 minutes before serving.
Notes
