Ingredients

  • 1 pound Italian sausage (sweet or spicy)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half (optional)
  • 9–12 oz fresh or frozen cheese tortellini
  • 2 cups baby spinach or kale
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Parmesan cheese for serving

Instructions

  1. Heat the pan and brown the sausage: Warm a tablespoon of olive oil over medium heat. Add the sausage and cook until browned, about 6–8 minutes.
  2. Sauté the aromatics: Push the sausage to the side and add the diced onion. Sauté until translucent, about 3–4 minutes, then add minced garlic and cook another minute.
  3. Add tomatoes and herbs: Stir in the crushed tomatoes, oregano, and basil. Let the mixture simmer for 5 minutes.
  4. Pour in the broth and simmer: Add the broth and bring to a gentle boil. Lower the heat and simmer for 10 minutes.
  5. Add the tortellini and greens: Toss in the tortellini and cook according to the package directions. Stir in the baby spinach to wilt gently.
  6. Finish with cream and cheese: If using cream, stir it in and warm through. Season with salt and pepper and serve with Parmesan.
