Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsalted butter (melted)
  • ¼ cup granulated sugar
  • A pinch of salt
  • For the Filling:
  • 1 cup corn syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups pecans (chopped)
  • 1 cup salted caramel sauce (store-bought or homemade)
  • For the Topping:
  • More salted caramel sauce for drizzling
  • Sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix melted butter, flour, sugar, and a pinch of salt to form a crumbly dough.
  3. Press the dough evenly into the bottom of a lined 8×8 inch baking pan. Bake for 10-15 minutes until lightly golden brown.
  4. In a large bowl, whisk together corn syrup, eggs, and vanilla extract.
  5. Add chopped pecans and half of the salted caramel sauce to the mixture, and mix well.
  6. Pour the pecan mixture over the warm crust and bake for 25-30 minutes until the edges look set but the center is slightly jiggly.
  7. Let the bars cool at room temperature for about an hour, then chill in the fridge for another hour.
  8. Drizzle more salted caramel sauce on top and sprinkle with sea salt before slicing into squares.
