- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Juice of 1 lemon
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced (optional)
- Juice of 1 lime
- Fresh cilantro, chopped (about 1/4 cup)
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C). Pat the salmon dry with a paper towel. Drizzle olive oil over the fillets and season with garlic powder, paprika, salt, and pepper. Squeeze lemon juice over the top.
- Place the salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes or until the salmon flakes easily with a fork.
- In a medium bowl, combine the diced mango, red onion, jalapeño, lime juice, and cilantro. Toss everything together and season with salt to taste.
- Once your salmon is done baking, plate it up and serve with a generous scoop of mango salsa on top.
Notes
For a fancier presentation, sprinkle extra cilantro on top or add lime wedges on the side.
