Description

A delicious combination of savory salmon and sweet mango salsa, perfect for a tropical-themed dinner.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Juice of 1 lemon
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 1 lime
  • Fresh cilantro, chopped (about 1/4 cup)
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the salmon dry with a paper towel. Drizzle olive oil over the fillets and season with garlic powder, paprika, salt, and pepper. Squeeze lemon juice over the top.
  2. Place the salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes or until the salmon flakes easily with a fork.
  3. In a medium bowl, combine the diced mango, red onion, jalapeño, lime juice, and cilantro. Toss everything together and season with salt to taste.
  4. Once your salmon is done baking, plate it up and serve with a generous scoop of mango salsa on top.

Notes

For a fancier presentation, sprinkle extra cilantro on top or add lime wedges on the side.
