Description

Ingredients

  • 8 oz. pasta (fettuccine or linguine)
  • 8 oz. salmon fillet
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 23 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Squeeze of lemon juice

Instructions

  1. Boil a pot of salted water and cook pasta according to package instructions.
  2. Season the salmon with salt and pepper and cook in a skillet with olive oil for 4-5 minutes per side.
  3. Melt butter in the same skillet, add garlic, and sauté for 30 seconds.
  4. Pour in heavy cream and let simmer for 3-5 minutes until it thickens.
  5. Stir in lemon juice and Parmesan cheese until melted.
  6. Add spinach to the sauce until wilted, then combine with the cooked pasta and flaked salmon.
  7. Serve immediately, garnished with extra Parmesan and cracked pepper.

Notes

For additional flavors, consider adding sun-dried tomatoes or capers. This dish reheats well.
