- 8 oz. pasta (fettuccine or linguine)
- 8 oz. salmon fillet
- 4 cups fresh spinach
- 1 cup heavy cream
- 2–3 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup Parmesan cheese, grated
- Salt and pepper, to taste
- Squeeze of lemon juice
Instructions
- Boil a pot of salted water and cook pasta according to package instructions.
- Season the salmon with salt and pepper and cook in a skillet with olive oil for 4-5 minutes per side.
- Melt butter in the same skillet, add garlic, and sauté for 30 seconds.
- Pour in heavy cream and let simmer for 3-5 minutes until it thickens.
- Stir in lemon juice and Parmesan cheese until melted.
- Add spinach to the sauce until wilted, then combine with the cooked pasta and flaked salmon.
- Serve immediately, garnished with extra Parmesan and cracked pepper.
Notes
For additional flavors, consider adding sun-dried tomatoes or capers. This dish reheats well.
