Ingredients

  • 1 lb fresh asparagus
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: Squeeze of fresh lemon juice or dash of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse your asparagus under cold water and pat them dry. Trim the woody ends.
  3. Toss the asparagus with olive oil, salt, and pepper in a large bowl.
  4. Sprinkle the grated Parmesan over the asparagus.
  5. Spread the asparagus in a single layer on a baking sheet and roast for 12-15 minutes until tender and cheese is golden.

Notes

For extra crispiness, broil the asparagus for a couple of minutes at the end of roasting. You can add garlic or red pepper flakes for extra flavor.
