- 1 bunch of asparagus
- 3–4 medium-sized carrots
- 2 tablespoons of olive oil
- Salt and pepper (to taste)
- Optional seasonings: garlic powder, paprika, lemon juice, thyme, rosemary
Instructions
- Preheat the oven to 425°F (220°C).
- Prep the asparagus and carrots by rinsing them, trimming tough ends, and slicing the carrots thinly.
- Toss the asparagus and carrots in a bowl with olive oil, salt, pepper, and optional seasonings until evenly coated.
- Spread the seasoned veggies on a baking sheet in a single layer.
- Roast for about 20-25 minutes, flipping halfway through to achieve brown and crispy edges.
- Finish with a drizzle of lemon juice before serving if desired.
Notes
Don’t overcrowd the pan for best results. Feel free to experiment with different seasonings!
