Description

A deliciously simple recipe for Roasted Asparagus & Carrots that transforms these veggies into a mouthwatering dish.


Ingredients

  • 1 bunch of asparagus
  • 34 medium-sized carrots
  • 2 tablespoons of olive oil
  • Salt and pepper (to taste)
  • Optional seasonings: garlic powder, paprika, lemon juice, thyme, rosemary

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prep the asparagus and carrots by rinsing them, trimming tough ends, and slicing the carrots thinly.
  3. Toss the asparagus and carrots in a bowl with olive oil, salt, pepper, and optional seasonings until evenly coated.
  4. Spread the seasoned veggies on a baking sheet in a single layer.
  5. Roast for about 20-25 minutes, flipping halfway through to achieve brown and crispy edges.
