Description

A heartwarming beef stew made with tender beef, wholesome vegetables, and a rich broth, perfect for cozy dinners.


Ingredients

  • 2 pounds beef chuck (cut into 1-inch cubes)
  • 4 medium-sized carrots (sliced)
  • 3 medium potatoes (peeled and diced)
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the Dutch oven over medium-high heat and add olive oil. Sear half of the beef cubes until browned, then remove and set aside.
  2. Add onions and garlic to the pot, sauté until fragrant and onions are translucent.
  3. Add tomato paste and cook for a few minutes.
  4. Return the seared beef to the pot, add red wine, and scrape the bottom to release flavors. Let it boil for 3-4 minutes.
  5. Stir in beef broth, carrots, potatoes, thyme, rosemary, salt, and pepper, then bring to a simmer.
  6. Cover the Dutch oven and let it simmer on low for 2-3 hours or cook in a preheated oven at 325°F (160°C).
  7. Adjust seasoning to taste before serving.

Notes

This stew tastes even better the next day! For reheating, add a splash of water or broth if needed.
