- 2 pounds beef chuck (cut into 1-inch cubes)
- 4 medium-sized carrots (sliced)
- 3 medium potatoes (peeled and diced)
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the Dutch oven over medium-high heat and add olive oil. Sear half of the beef cubes until browned, then remove and set aside.
- Add onions and garlic to the pot, sauté until fragrant and onions are translucent.
- Add tomato paste and cook for a few minutes.
- Return the seared beef to the pot, add red wine, and scrape the bottom to release flavors. Let it boil for 3-4 minutes.
- Stir in beef broth, carrots, potatoes, thyme, rosemary, salt, and pepper, then bring to a simmer.
- Cover the Dutch oven and let it simmer on low for 2-3 hours or cook in a preheated oven at 325°F (160°C).
- Adjust seasoning to taste before serving.
Notes
This stew tastes even better the next day! For reheating, add a splash of water or broth if needed.
