Description

Colorful and delicious rainbow cupcakes that are perfect for any celebration.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • ½ cup milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • Food coloring (red, yellow, blue, green, purple)
  • Optional: Sprinkles for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the butter and sugar together until light and fluffy, then add the eggs one at a time, followed by the vanilla extract.
  3. Add the flour and baking powder mixture alternately with the milk until combined.
  4. Divide the batter into separate bowls and add a different color to each.
  5. Layer the batter into cupcake liners starting with purple and working up to red.
  6. Bake for 18-20 minutes until a toothpick comes out clean.
  7. Cool completely before frosting.
  8. Decorate with sprinkles and enjoy!
