Description

A quick, delicious dish featuring juicy Greek chicken meatballs served over zesty lemon orzo.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 egg
  • Salt and pepper, to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Zest and juice of 1 lemon
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Mix the ground chicken, breadcrumbs, feta, onion, garlic, parsley, oregano, egg, salt, and pepper in a large bowl.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large skillet over medium heat and add the meatballs, cooking until golden brown on all sides, about 10-12 minutes.
  4. Boil the chicken broth in a separate pot.
  5. Add the orzo to the boiling broth and cook according to package directions, about 8-10 minutes.
  6. Stir in the lemon zest, lemon juice, and olive oil once the orzo is al dente.
  7. Toss in parsley for garnish.
  8. Scoop a generous helping of lemon orzo onto your plate and top with the meatballs.
  9. Garnish with extra parsley and feta, if desired.

Notes

For extra flavor, consider adding crushed red pepper or diced vegetables to the meatball mix.
