A quick, delicious dish featuring juicy Greek chicken meatballs served over zesty lemon orzo.
Ingredients

- 1 pound ground chicken
- 1/2 cup breadcrumbs (preferably whole wheat)
- 1/4 cup crumbled feta cheese
- 1/4 cup finely chopped onion
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh oregano, chopped
- 1 egg
- Salt and pepper, to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- Zest and juice of 1 lemon
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Mix the ground chicken, breadcrumbs, feta, onion, garlic, parsley, oregano, egg, salt, and pepper in a large bowl.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- Heat olive oil in a large skillet over medium heat and add the meatballs, cooking until golden brown on all sides, about 10-12 minutes.
- Boil the chicken broth in a separate pot.
- Add the orzo to the boiling broth and cook according to package directions, about 8-10 minutes.
- Stir in the lemon zest, lemon juice, and olive oil once the orzo is al dente.
- Toss in parsley for garnish.
- Scoop a generous helping of lemon orzo onto your plate and top with the meatballs.
- Garnish with extra parsley and feta, if desired.
Notes
For extra flavor, consider adding crushed red pepper or diced vegetables to the meatball mix.
