Delicious and customizable quiche muffins that are perfect for breakfast and easy to prep ahead of time.
Ingredients

- 6 eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar, feta, or goat cheese)
- 1–2 cups chopped veggies (bell peppers, spinach, onions)
- 1 cup diced cooked bacon or ham (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Grease 12 cups of a muffin tin with cooking spray or olive oil.
- Mix eggs and milk in a large bowl until well combined.
- Add cheese and veggies to the mixture.
- Add diced cooked bacon or ham if desired.
- Pour the mixture into muffin cups, filling them about three-quarters full.
- Bake for 20-25 minutes, or until the tops are golden brown and set.
- Cool for a few minutes, then remove from the tin and enjoy!
Notes
Store in an airtight container in the fridge for up to 4-5 days or freeze for up to 2 months. Reheat in the microwave or oven for the best results.
