Description

Soft, spiced, and protein-packed—these pumpkin protein bars are a clean and delicious snack for any time of day. No chalky textures or junk ingredients.


Ingredients

1 cup pumpkin purée

1 ½ cups rolled oats

½ cup vanilla protein powder

⅓ cup nut butter (almond or peanut)

¼ cup maple syrup or honey

1 tsp pumpkin pie spice

1 tsp vanilla extract

Pinch of salt

Optional: chocolate chips or nuts


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.

2. In a large bowl, mix pumpkin, nut butter, syrup, and vanilla until smooth.

3. Add oats, protein powder, pumpkin spice, and salt. Mix thoroughly.

4. Fold in optional chocolate chips or nuts.

5. Press mixture evenly into prepared pan.

6. Bake for 15–18 minutes or until set.

7. Let cool completely before slicing into bars.

Notes

Use certified gluten-free oats if needed.

Store in the fridge for up to a week or freeze for 3 months.

No-bake version: skip baking and refrigerate until firm.
