Description

A unique twist on classic beef bolognese that incorporates pumpkin for added nutrition and flavor.


Ingredients

  • 1 lb ground beef (80/20)
  • 1 can (15 oz) pumpkin purée
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 finely chopped carrot
  • 2 tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • ½ cup red or white wine
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • A pinch of nutmeg
  • Salt and pepper to taste
  • Parmesan cheese (for topping)
  • Fresh basil (for topping)
  • Chili flakes (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onion, garlic, and carrot for about 5 minutes until softened.
  2. Add ground beef and brown it for 5-7 minutes, breaking it up with a spoon.
  3. Stir in tomato paste, pumpkin purée, and diced tomatoes; let flavors meld for a few minutes.
  4. Season with oregano, basil, nutmeg, salt, and pepper.
  5. Pour in wine and simmer for at least 10 minutes.
  6. Reduce heat, cover, and let the bolognese simmer for 20-30 minutes.
  7. Toss the bolognese with pasta of choice, top with parmesan and fresh basil, and serve.

Notes

This bolognese makes great leftovers; freeze any extras for quick meals later.
