A unique twist on classic beef bolognese that incorporates pumpkin for added nutrition and flavor.
Ingredients

- 1 lb ground beef (80/20)
- 1 can (15 oz) pumpkin purée
- 1 chopped onion
- 2 minced garlic cloves
- 1 finely chopped carrot
- 2 tbsp tomato paste
- 1 can (14.5 oz) diced tomatoes (with juice)
- ½ cup red or white wine
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- A pinch of nutmeg
- Salt and pepper to taste
- Parmesan cheese (for topping)
- Fresh basil (for topping)
- Chili flakes (optional)
Instructions
- In a large pot, heat olive oil over medium heat and sauté onion, garlic, and carrot for about 5 minutes until softened.
- Add ground beef and brown it for 5-7 minutes, breaking it up with a spoon.
- Stir in tomato paste, pumpkin purée, and diced tomatoes; let flavors meld for a few minutes.
- Season with oregano, basil, nutmeg, salt, and pepper.
- Pour in wine and simmer for at least 10 minutes.
- Reduce heat, cover, and let the bolognese simmer for 20-30 minutes.
- Toss the bolognese with pasta of choice, top with parmesan and fresh basil, and serve.
Notes
This bolognese makes great leftovers; freeze any extras for quick meals later.
