Description

Ingredients

  • 1 cup corn kernels (frozen or fresh)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cups milk or heavy cream
  • Salt and pepper to taste
  • Optional: Thyme, parsley, or paprika for seasoning

Instructions

  1. Sauté the diced onion and garlic in a large pot with oil over medium heat until fragrant and translucent.
  2. Add chopped potatoes and pour in the broth, stirring to combine. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until potatoes soften.
  3. If desired, blend part of the chowder with an immersion blender for a creamier texture.
