Description
A creamy potato celery soup that’s wholesome and comforting.
Ingredients
5 medium potatoes, diced
6 celery stalks, chopped
1 onion, diced
3 garlic cloves, minced
4 cups vegetable broth
1 cup milk
2 tbsp olive oil or butter
½ tsp thyme
Salt & pepper
Fresh parsley for garnish
Instructions
1. Sauté onion, garlic, and celery in butter or oil.
2. Add potatoes and thyme, stir well.
3. Pour in broth, simmer until potatoes are tender.
4. Blend until smooth.
5. Stir in milk, season with salt & pepper.
6. Serve hot with garnish.
Notes
Swap onion with leeks for milder taste.
Add nutmeg for warmth.
For protein, stir in beans or chicken.
Vegan option: use coconut milk.
