- 4 bone-in chicken thighs
- 2 cups long grain rice
- 1 tsp paprika
- 1/2 tsp saffron (optional)
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups chicken broth
- 2 tomatoes, diced
- 2 bay leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season the chicken with salt, pepper, and paprika.
- Heat olive oil in a large pot and sear the chicken until golden brown.
- Toss in chopped onions, garlic, and bell peppers. Sauté until fragrant.
- Stir in the rice and toast it briefly with the veggies.
- Pour in the chicken broth and add the spices and tomatoes. Bring to a boil.
- Return the chicken to the pot, reduce heat, and simmer for 20-30 minutes.
- Check for flavor and adjust seasoning if necessary.
- Serve hot, fluffing the rice with a fork and garnishing with parsley.
