Description

Ingredients

  • 4 bone-in chicken thighs
  • 2 cups long grain rice
  • 1 tsp paprika
  • 1/2 tsp saffron (optional)
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cups chicken broth
  • 2 tomatoes, diced
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt, pepper, and paprika.
  2. Heat olive oil in a large pot and sear the chicken until golden brown.
  3. Toss in chopped onions, garlic, and bell peppers. Sauté until fragrant.
  4. Stir in the rice and toast it briefly with the veggies.
  5. Pour in the chicken broth and add the spices and tomatoes. Bring to a boil.
  6. Return the chicken to the pot, reduce heat, and simmer for 20-30 minutes.
  7. Check for flavor and adjust seasoning if necessary.
  8. Serve hot, fluffing the rice with a fork and garnishing with parsley.
