Description

Delicious fluffy cake bars bursting with tropical coconut flavor and a fun pink hue.


Ingredients

Scale
  • 1 box of vanilla cake mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 cup coconut milk
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup mini marshmallows
  • Pink food coloring (a few drops)
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the cake mix, eggs, vegetable oil, and coconut milk in a large bowl until smooth.
  3. Fold in the shredded coconut, marshmallows, and pink food coloring until evenly distributed.
  4. Pour the batter into a greased baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
  5. Let the cake cool completely before cutting into squares.
  6. Dust the tops with powdered sugar before serving.

Notes

Store in an airtight container for 3-5 days. They can also be frozen if wrapped properly.
