Ingredients

- 1 box of vanilla cake mix
- 3 eggs
- 1/3 cup vegetable oil
- 1 cup coconut milk
- 1 cup shredded coconut (sweetened or unsweetened)
- 1 cup mini marshmallows
- Pink food coloring (a few drops)
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the cake mix, eggs, vegetable oil, and coconut milk in a large bowl until smooth.
- Fold in the shredded coconut, marshmallows, and pink food coloring until evenly distributed.
- Pour the batter into a greased baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely before cutting into squares.
- Dust the tops with powdered sugar before serving.
Notes
Store in an airtight container for 3-5 days. They can also be frozen if wrapped properly.
