Description

A creamy, tangy pasta salad that’s perfect for picnics and potlucks.


Ingredients

  • 1 lb rotini pasta
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons sugar
  • 1 cup chopped bell peppers (red, yellow, or green)
  • 1/2 cup finely chopped onion
  • 1 cup frozen peas (thawed)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Boil the rotini according to package instructions until al dente.
  2. In a large bowl, mix the mayonnaise, apple cider vinegar, and sugar. Adjust sugar to taste.
  3. Toss the cooked pasta into the dressing with the bell peppers, onions, peas, and cheese.
  4. Season with salt and pepper to taste.
  5. Chill in the fridge for at least an hour before serving.
