- 1 lb rotini pasta
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 2 teaspoons sugar
- 1 cup chopped bell peppers (red, yellow, or green)
- 1/2 cup finely chopped onion
- 1 cup frozen peas (thawed)
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Boil the rotini according to package instructions until al dente.
- In a large bowl, mix the mayonnaise, apple cider vinegar, and sugar. Adjust sugar to taste.
- Toss the cooked pasta into the dressing with the bell peppers, onions, peas, and cheese.
- Season with salt and pepper to taste.
- Chill in the fridge for at least an hour before serving.
Notes
This pasta salad can be made a day in advance for better flavor. It’s versatile—add grilled chicken or keep it vegetarian.
