Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and sugars in a bowl until light and fluffy.
- Add the egg and vanilla, mixing until well blended.
- Combine dry ingredients in a separate bowl, then mix into the wet ingredients.
- Prepare the pineapple by dicing if fresh or draining if canned.
- Create the caramel layer by melting brown sugar and butter in a skillet, then adding pineapple for 2-3 minutes.
- Assemble cookie dough on a baking sheet, topping each with the pineapple mixture.
