Description

A classic dessert with caramelized pineapple and a golden-brown cake, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 can of sliced pineapple
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and melt the butter in a 9-inch round cake pan. Add the brown sugar on top.
  2. Layer the pineapple slices on top of the butter and sugar, placing a cherry in the center of each slice.
  3. Whisk together the flour, granulated sugar, baking powder, and salt in one bowl. In another bowl, combine the milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Carefully pour the batter over the pineapple and cherries and bake for 40-50 minutes until a toothpick comes out clean.
  6. Cool for 10 minutes before flipping the cake onto a serving plate.
  7. Serve with whipped cream or vanilla ice cream if desired.

Notes

Make sure to grease your pan to avoid sticking. Check the cake around the 40-minute mark to prevent it from drying out.
