- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 can of sliced pineapple
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 large eggs
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and melt the butter in a 9-inch round cake pan. Add the brown sugar on top.
- Layer the pineapple slices on top of the butter and sugar, placing a cherry in the center of each slice.
- Whisk together the flour, granulated sugar, baking powder, and salt in one bowl. In another bowl, combine the milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Carefully pour the batter over the pineapple and cherries and bake for 40-50 minutes until a toothpick comes out clean.
- Cool for 10 minutes before flipping the cake onto a serving plate.
- Serve with whipped cream or vanilla ice cream if desired.
Notes
Make sure to grease your pan to avoid sticking. Check the cake around the 40-minute mark to prevent it from drying out.
