- 1 lb chicken thighs and drumsticks
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil (for marinating)
- 4 cloves minced garlic
- 2 tbsp lemon juice
- 1 tsp dried thyme or rosemary
Instructions
- Cut chicken into pieces and pat dry.
- Marinate chicken with olive oil, minced garlic, lemon juice, and herbs for at least 30 minutes.
- In a bowl, mix the flour, cornstarch, garlic powder, onion powder, salt, and pepper.
- Dredge the marinated chicken in the flour mixture and shake off excess.
- Heat oil in a pan and fry each piece until golden brown, flipping halfway through (10-12 minutes per side).
Notes
For a baking option, preheat oven to 425°F and bake for 30-40 minutes, flipping halfway.
