- Beef (Chuck Roast)
- Carrots
- Potatoes
- Onions
- Fresh Thyme
- Bay Leaves
- Beef or Chicken Broth
- Red Wine

Instructions
- Brown the beef in a hot Dutch oven on medium-high heat.
- Add chopped onions, carrots, and garlic. Sauté for 5-7 minutes.
- Deglaze the pot with red wine, scraping the bottom for flavor.
- Add beef broth, herbs, salt, and pepper, then bring to a gentle simmer.
- Cover and let simmer for at least 90 minutes.
- About 30 minutes before serving, add potatoes to the stew.
