Instructions
- Preheat your oven to 350°F (175°C).
- Line your baking sheets with parchment paper.
- Cream butter and sugar together until light and fluffy.
- Add vanilla and baking powder, mixing until combined.
- Slowly incorporate flour until just combined; do not overmix.
- Fold in chocolate chips and crushed peppermint.
- Scoop dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes until edges are slightly golden.
- Allow cookies to cool for a few minutes before transferring to a wire rack.
- If desired, drizzle with white chocolate and sprinkle more crushed peppermint on top.
Notes
For best results, crush peppermint candies gently; use a zip-top bag and rolling pin. Store in an airtight container for up to a week.
