Description
A tender beef dish with vibrant bell peppers and a savory sauce, all made easily in a crock pot.
Ingredients
Scale
- 1.5 to 2 lbs flank steak or sirloin
- 2–3 bell peppers (red, green, yellow)
- 1 onion
- 3 cloves of garlic
- 1 cup beef broth
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons cornstarch
- Salt and pepper to taste
Instructions
- Slice the beef into thin strips about 1/4-inch thick.
- Chop bell peppers and onion into strips, and mince the garlic.
- Optional: Sauté beef in a skillet for a couple of minutes to seal in juices.
- In the crock pot, layer the beef, followed by bell peppers, onion, and garlic.
- In a mixing bowl, whisk together beef broth, soy sauce, brown sugar, salt, pepper, and cornstarch.
- Pour sauce over the meat and veggies in the crock pot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- After cooking, stir gently. If sauce isn’t thick enough, switch to high for the last 30 minutes with lid off.
Notes
Leftovers taste even better after sitting in the sauce overnight. Store in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months.
