Delightful bite-sized pecan tart bites featuring a buttery, flaky crust and a sweet, nutty filling.

- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and cubed
- ¼ cup granulated sugar
- ¼ teaspoon salt
- 2–4 tablespoons ice water
- 1 cup pecans, roughly chopped
- ¾ cup light brown sugar
- ½ cup corn syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon unsalted butter, melted
Instructions
- In a large bowl, combine flour, sugar, and salt. Toss in cubed butter and mix until crumbly.
- Gradually add ice water, one tablespoon at a time, until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
- Roll out the chilled dough to about 1/8 inch thick and cut into circles to fit mini tart pans.
- In a medium bowl, combine brown sugar, corn syrup, eggs, vanilla, and melted butter. Whisk until smooth.
- Fold in the chopped pecans until evenly distributed.
- Preheat your oven to 350°F (175°C).
- Spoon the pecan mixture into each tart crust, being careful not to overfill.
- Bake for about 20-25 minutes until the filling is set and the crust is golden.
- Let the tarts cool before serving. Enjoy!
Notes
Try adding a splash of bourbon or maple syrup for a unique flavor twist. Serve with a sprinkle of powdered sugar or chocolate sauce for garnish.
