Description

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter
  • 1 cup corn syrup
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves
  • A pinch of salt (optional)
  • Chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine flour and powdered sugar.
  3. Cut the cold butter into small pieces and mix into the flour mixture until it resembles coarse crumbs.
  4. Grease an 8×8-inch baking dish and firmly press the crust mixture evenly into the bottom.
  5. Bake for 15-20 minutes, until lightly golden.
  6. In a separate bowl, whisk together corn syrup, eggs, granulated sugar, and vanilla extract.
  7. Fold in pecan halves and chocolate chips, if using.
  8. Pour the pecan filling over the baked crust.
  9. Bake again for an additional 25-30 minutes until the filling is set and the top is glistening.
  10. Let cool in the pan for about 20 minutes before transferring to a wire rack to cool completely.
  11. Cut into squares and serve. Pair with vanilla ice cream if desired.
