Description

A delightful pecan pie featuring a light and crunchy graham cracker crust, perfect for any occasion.


Ingredients

  • 2 cups graham cracker crumbs
  • ½ cup unsweetened cocoa powder (optional)
  • ½ cup granulated sugar
  • ½ cup melted butter
  • 1 teaspoon vanilla extract
  • 3 eggs (or 2 tablespoons flaxseed meal mixed with 6 tablespoons water for vegan option)
  • 1 cup corn syrup
  • ¾ cup packed brown sugar
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs, sugar, cocoa powder (if using), and melted butter until it resembles wet sand.
  3. Press this mixture into the bottom and sides of a pie pan.
  4. Bake for 8-10 minutes until slightly golden. Let it cool while you prepare the filling.
  5. In a large mixing bowl, whisk together the eggs, corn syrup, brown sugar, and vanilla extract.
  6. Stir in the chopped pecans.
  7. Pour the filling into the cooled graham cracker crust.
  8. Bake for 50-60 minutes or until the filling is set and slightly jiggles in the center.
  9. Cool at room temperature for at least 2 hours before slicing.
  10. Top with whipped cream or vanilla ice cream if desired and serve.

Notes
