- 2 cups graham cracker crumbs
- ½ cup unsweetened cocoa powder (optional)
- ½ cup granulated sugar
- ½ cup melted butter
- 1 teaspoon vanilla extract
- 3 eggs (or 2 tablespoons flaxseed meal mixed with 6 tablespoons water for vegan option)
- 1 cup corn syrup
- ¾ cup packed brown sugar
- 2 cups chopped pecans
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs, sugar, cocoa powder (if using), and melted butter until it resembles wet sand.
- Press this mixture into the bottom and sides of a pie pan.
- Bake for 8-10 minutes until slightly golden. Let it cool while you prepare the filling.
- In a large mixing bowl, whisk together the eggs, corn syrup, brown sugar, and vanilla extract.
- Stir in the chopped pecans.
- Pour the filling into the cooled graham cracker crust.
- Bake for 50-60 minutes or until the filling is set and slightly jiggles in the center.
- Cool at room temperature for at least 2 hours before slicing.
- Top with whipped cream or vanilla ice cream if desired and serve.
Notes
Add a dash of cinnamon or nutmeg for extra flavor. Use fresh pecans for the best taste.
