Instructions
- Preheat your oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl until resembling wet sand.
- Press the mixture firmly into an 8×8 inch baking dish and bake for 8-10 minutes until golden.
- In a mixing bowl, beat cream cheese until smooth, then add granulated sugar, eggs, and vanilla, mixing until creamy.
- Pour the cheesecake mixture over the crust, spreading evenly.
- In a medium bowl, whisk together corn syrup, brown sugar, melted butter, and eggs until smooth, then stir in chopped pecans.
- Pour this mixture over the cheesecake layer.
- Bake for 30-35 minutes, or until the center is set.
- Cool for at least an hour before slicing.
- Cut into squares and serve topped with whipped cream and extra pecans if desired.
Notes
Use room temperature ingredients for the smoothest cheesecake and control the baking time to avoid burning. Cool in the fridge for best texture and flavor.
