A delightful combination of creamy cheesecake and sweet, nutty pecan pie in bar form.

- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup sugar
- 2 (8-ounce) packages cream cheese, softened
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped
- ½ cup corn syrup
- â…“ cup brown sugar
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the graham cracker crumbs, melted butter, and sugar until it resembles wet sand.
- Press the crumb mixture into an 8×8 inch baking pan lined with parchment paper and bake for 10 minutes.
- In a mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing just until combined. Add vanilla extract and mix again.
- Spread the cheesecake filling over the cooled crust evenly.
- In another bowl, mix chopped pecans, corn syrup, brown sugar, melted butter, vanilla, and a pinch of salt.
- Pour the pecan mixture over the cheesecake layer.
- Bake again for 25–30 minutes until the cheesecake is set but a little jiggly.
- Let cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.
Notes
Try adding a sprinkle of cinnamon or nutmeg for enhanced flavor. Can substitute pecans with walnuts or almonds.
