Description

A delightful combination of creamy cheesecake and sweet, nutty pecan pie in bar form.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter
  • ¼ cup sugar
  • 2 (8-ounce) packages cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • ½ cup corn syrup
  • â…“ cup brown sugar
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the graham cracker crumbs, melted butter, and sugar until it resembles wet sand.
  3. Press the crumb mixture into an 8×8 inch baking pan lined with parchment paper and bake for 10 minutes.
  4. In a mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, mixing just until combined. Add vanilla extract and mix again.
  6. Spread the cheesecake filling over the cooled crust evenly.
  7. In another bowl, mix chopped pecans, corn syrup, brown sugar, melted butter, vanilla, and a pinch of salt.
  8. Pour the pecan mixture over the cheesecake layer.
  9. Bake again for 25–30 minutes until the cheesecake is set but a little jiggly.
  10. Let cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.

Notes

Try adding a sprinkle of cinnamon or nutmeg for enhanced flavor. Can substitute pecans with walnuts or almonds.
