Description

A refreshing summer salad that combines sweet peaches, hydrating watermelon, and tangy feta, topped with fresh mint and a splash of citrus.


Ingredients

  • 3 cups watermelon, cubed (seeds removed)
  • 2โ€“3 ripe peaches, sliced
  • 1/2 cup crumbled feta
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp honey or agave (optional)
  • Pinch of flaky sea salt
  • Fresh black pepper

Instructions

  1. Wash and cube the watermelon; place it in a large bowl.
  2. Slice the peaches and add them to the bowl with watermelon.
  3. Crumble the feta over the fruit.
  4. Add chopped mint, lime juice, olive oil, and honey if using.
  5. Season with a pinch of sea salt and black pepper.
  6. Gently toss everything once or twice to combine. Serve immediately or chill for up to 30 minutes.

Notes

For a protein boost, add grilled chicken slices. Use ripe peaches for best flavor.
