Description
A refreshing summer salad that combines sweet peaches, hydrating watermelon, and tangy feta, topped with fresh mint and a splash of citrus.
Ingredients

- 3 cups watermelon, cubed (seeds removed)
- 2โ3 ripe peaches, sliced
- 1/2 cup crumbled feta
- 1/4 cup fresh mint leaves, chopped
- Juice of 1 lime
- 2 tbsp olive oil
- 1 tsp honey or agave (optional)
- Pinch of flaky sea salt
- Fresh black pepper
Instructions
- Wash and cube the watermelon; place it in a large bowl.
- Slice the peaches and add them to the bowl with watermelon.
- Crumble the feta over the fruit.
- Add chopped mint, lime juice, olive oil, and honey if using.
- Season with a pinch of sea salt and black pepper.
- Gently toss everything once or twice to combine. Serve immediately or chill for up to 30 minutes.
Notes
For a protein boost, add grilled chicken slices. Use ripe peaches for best flavor.
