- 4 cups chicken or vegetable broth

- Crispy bacon bits (optional)
- Salt and pepper to taste
Instructions
- Chop the potatoes, onions, and garlic.
- Melt the butter in a large pot and sauté the onions and garlic until soft.
- Add the chopped potatoes and cover with broth. Simmer for about 20 minutes until fork-tender.
- Blend the mixture until smooth or to your desired texture.
- Stir in the cream and season with salt and pepper to taste.
- Serve topped with cheese, bacon bits, and chives if desired.
