Description

A creamy, hearty potato soup that’s comforting and perfect for chilly days.


Ingredients

Scale
  • 4 large potatoes (Russet or Yukon Gold)
  • 1 stick of butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup half-and-half or heavy cream
  • Shredded cheese (optional)
  • Crispy bacon bits (optional)
  • Salt and pepper to taste

Instructions

  1. Chop the potatoes, onions, and garlic.
  2. Melt the butter in a large pot and sauté the onions and garlic until soft.
  3. Add the chopped potatoes and cover with broth. Simmer for about 20 minutes until fork-tender.
  4. Blend the mixture until smooth or to your desired texture.
  5. Stir in the cream and season with salt and pepper to taste.
  6. Serve topped with cheese, bacon bits, and chives if desired.

This soup freezes well. Customize with different cheeses or vegetables.
