Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons vinegar (balsamic, red wine, or lemon juice)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and let cool.
  2. In a large bowl, combine the pasta, chopped vegetables, protein (if using), and cheese.
  3. In a separate small bowl, whisk together olive oil, vinegar, Dijon mustard, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
