Ingredients
- Chicken thighs or breasts
- Long grain rice (such as jasmine or basmati)
- Chicken broth
- Onions, bell peppers, and carrots
- Salt
- Pepper
- Garlic powder
- Soy sauce
- Olive oil
- Optional: Fresh or dried herbs (rosemary, thyme, parsley)
- Optional: Lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- Optionally, sear the chicken in olive oil for 3–4 minutes on each side.
- In a large baking dish, combine rice, chopped vegetables, chicken broth, olive oil, and seasonings; mix well.
- Nestle the chicken on top of the rice mixture.
- Cover the dish with foil and bake for 45 minutes; remove foil and bake for an additional 15–20 minutes.
- Ensure the chicken reaches an internal temperature of 165°F (75°C).
- Fluff the rice with a fork and serve.
