Description

Ingredients

  • Chicken thighs or breasts
  • Long grain rice (such as jasmine or basmati)
  • Chicken broth
  • Onions, bell peppers, and carrots
  • Salt
  • Pepper
  • Garlic powder
  • Soy sauce
  • Olive oil
  • Optional: Fresh or dried herbs (rosemary, thyme, parsley)
  • Optional: Lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Optionally, sear the chicken in olive oil for 3–4 minutes on each side.
  3. In a large baking dish, combine rice, chopped vegetables, chicken broth, olive oil, and seasonings; mix well.
  4. Nestle the chicken on top of the rice mixture.
  5. Cover the dish with foil and bake for 45 minutes; remove foil and bake for an additional 15–20 minutes.
  6. Ensure the chicken reaches an internal temperature of 165°F (75°C).
  7. Fluff the rice with a fork and serve.
