Ingredients

- 4 cups potatoes, diced (Russet or Yukon Gold)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth)
- 1 cup heavy cream
- ½ cup cooked and crumbled bacon
- 1 cup shredded cheddar cheese
- Green onions, for topping
- Salt and pepper, to taste
Instructions
- Scrub and dice the potatoes into small pieces.
- Sauté chopped onions and minced garlic in a large pot with butter or olive oil until golden.
- Add the potatoes and chicken broth, bring to a boil, then simmer until the potatoes are tender (about 15-20 minutes), stirring occasionally.
- Blend the mixture to your desired consistency (smooth or chunky).
- Stir in the cream and season with salt and pepper. Optionally add paprika for extra flavor.
- Serve hot topped with crumbled bacon, shredded cheddar, and green onions.
