Description

A creamy, comforting potato soup filled with flavor, topped with bacon and cheese.


Ingredients

  • 4 cups potatoes, diced (Russet or Yukon Gold)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream
  • ½ cup cooked and crumbled bacon
  • 1 cup shredded cheddar cheese
  • Green onions, for topping
  • Salt and pepper, to taste

Instructions

  1. Scrub and dice the potatoes into small pieces.
  2. Sauté chopped onions and minced garlic in a large pot with butter or olive oil until golden.
  3. Add the potatoes and chicken broth, bring to a boil, then simmer until the potatoes are tender (about 15-20 minutes), stirring occasionally.
  4. Blend the mixture to your desired consistency (smooth or chunky).
  5. Stir in the cream and season with salt and pepper. Optionally add paprika for extra flavor.
  6. Serve hot topped with crumbled bacon, shredded cheddar, and green onions.
