Description

A creamy and comforting potato soup that’s perfect for cold days.


Ingredients

Scale
  • 4 large russet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 4 slices bacon, cooked and crumbled
  • Chives, chopped for garnish

Instructions

  1. Peel and dice the potatoes into small chunks.
  2. Melt butter in a large pot over medium heat, then add the chopped onions and garlic; sauté until soft and translucent.
  3. Sprinkle in the flour and cook for a couple more minutes to create a roux.
  4. Add the diced potatoes and chicken broth; bring to a boil, then reduce heat and let it simmer.
  5. If desired, use an immersion blender to blend the soup to your preferred texture.
  6. Stir in the heavy cream and cheddar cheese until melted and combined.
  7. Top with crumbled bacon and chopped chives before serving.
