A creamy and comforting potato soup that’s perfect for cold days.
Ingredients

- 4 large russet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 tablespoons butter
- 1/4 cup flour
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 4 slices bacon, cooked and crumbled
- Chives, chopped for garnish
Instructions
- Peel and dice the potatoes into small chunks.
- Melt butter in a large pot over medium heat, then add the chopped onions and garlic; sauté until soft and translucent.
- Sprinkle in the flour and cook for a couple more minutes to create a roux.
- Add the diced potatoes and chicken broth; bring to a boil, then reduce heat and let it simmer.
- If desired, use an immersion blender to blend the soup to your preferred texture.
- Stir in the heavy cream and cheddar cheese until melted and combined.
- Top with crumbled bacon and chopped chives before serving.
Notes
Feel free to add extra spices or use different types of potatoes to personalize your soup.
