Description

A simple and delicious one-pot pasta dish featuring chicken, black beans, and vibrant vegetables.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes (with juices)
  • 2 cups chicken broth
  • 1 tablespoon taco seasoning
  • 8 ounces penne pasta
  • 1 cup corn
  • Salt and pepper to taste
  • Shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Sauté the chicken in a large pot with olive oil over medium-high heat.
  2. Add the onion, garlic, and bell peppers; sauté until onions are translucent.
  3. Stir in black beans, diced tomatoes, chicken broth, and taco seasoning.
  4. Add the pasta, pushing it down to submerge in the broth. Bring to a boil, then reduce heat and cover.
  5. Simmer for about 15 minutes, stirring occasionally.
  6. When pasta is al dente, stir in corn and shredded cheese if desired.
  7. Garnish with fresh cilantro and serve hot.

Notes

Feel free to customize with shrimp or tofu, and add leftover veggies. Great for meal prep and keeps well in the fridge.
