- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup bell peppers, diced
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes (with juices)
- 2 cups chicken broth
- 1 tablespoon taco seasoning
- 8 ounces penne pasta
- 1 cup corn
- Salt and pepper to taste
- Shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- Sauté the chicken in a large pot with olive oil over medium-high heat.
- Add the onion, garlic, and bell peppers; sauté until onions are translucent.
- Stir in black beans, diced tomatoes, chicken broth, and taco seasoning.
- Add the pasta, pushing it down to submerge in the broth. Bring to a boil, then reduce heat and cover.
- Simmer for about 15 minutes, stirring occasionally.
- When pasta is al dente, stir in corn and shredded cheese if desired.
- Garnish with fresh cilantro and serve hot.
Notes
Feel free to customize with shrimp or tofu, and add leftover veggies. Great for meal prep and keeps well in the fridge.
