Description

Ingredients

  • 1 cup orzo pasta
  • 1 cup fresh asparagus, cut into bite-sized pieces
  • 1 cup fresh or frozen peas
  • 3 cups vegetable broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Parmesan cheese, grated (optional)
  • Fresh herbs for garnish (like basil or parsley)

Instructions

  1. Heat the olive oil over medium heat, then add minced garlic and sauté for about 30 seconds.
  2. Add in asparagus and cook for 2-3 minutes until slightly softened.
  3. Pour in the vegetable broth, then stir in orzo and a pinch of salt and pepper.
  4. Bring to a boil, then reduce to simmer, cover, and cook for 10-12 minutes.
  5. Add the peas and stir until heated through.
  6. Season to taste and add lemon zest or more cheese if desired.
  7. Plate the dish and garnish with fresh herbs and additional Parmesan if you like.
