Description

A cozy and comforting soup that combines the flavors of lasagna with the ease of a one-pot meal.


Ingredients

Scale
  • 1 lb ground meat (beef, sausage, or plant-based alternative)
  • 8 oz broken lasagna noodles
  • 24 oz jar of tomato sauce
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Optional: spinach, bell peppers, mushrooms
  • 4 cups low sodium chicken or vegetable broth

Instructions

  1. In a large pot, brown your chosen meat over medium heat.
  2. If using, add vegetables to the pot and cook for a few minutes.
  3. Stir in the tomato sauce, broth, and seasonings, mixing well.
  4. Add broken lasagna noodles and cook until al dente, about 8-10 minutes.
  5. Remove from heat and stir in ricotta cheese.
  6. Top with mozzarella and Parmesan cheese if desired, and serve with fresh herbs.

Notes

Customize with herbs or extra cheese for added flavor. Store leftovers in the fridge for 3-4 days.
