A cozy and comforting soup that combines the flavors of lasagna with the ease of a one-pot meal.
Ingredients

- 1 lb ground meat (beef, sausage, or plant-based alternative)
- 8 oz broken lasagna noodles
- 24 oz jar of tomato sauce
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- Optional: spinach, bell peppers, mushrooms
- 4 cups low sodium chicken or vegetable broth
Instructions
- In a large pot, brown your chosen meat over medium heat.
- If using, add vegetables to the pot and cook for a few minutes.
- Stir in the tomato sauce, broth, and seasonings, mixing well.
- Add broken lasagna noodles and cook until al dente, about 8-10 minutes.
- Remove from heat and stir in ricotta cheese.
- Top with mozzarella and Parmesan cheese if desired, and serve with fresh herbs.
Notes
Customize with herbs or extra cheese for added flavor. Store leftovers in the fridge for 3-4 days.
