Instructions
- Chop the chicken into bite-sized pieces and prepare the garlic and ginger.
- In a pot, heat sesame oil over medium heat and brown the chicken for 5-7 minutes.
- Add garlic and ginger, cooking until fragrant.
- Stir in pineapple, soy sauce, and honey, letting it mingle for 5 minutes.
- Add jasmine rice, coconut milk, and chicken broth, stirring well.
- Bring to a boil, then cover and reduce heat to low, simmering for 20 minutes.
- Turn off the heat and let sit for 5 minutes before fluffing the rice and serving.
