Ingredients

  • 1 cup pineapple chunks (fresh or canned)

  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup chicken broth (or water)

Instructions

  1. Chop the chicken into bite-sized pieces and prepare the garlic and ginger.
  2. In a pot, heat sesame oil over medium heat and brown the chicken for 5-7 minutes.
  3. Add garlic and ginger, cooking until fragrant.
  4. Stir in pineapple, soy sauce, and honey, letting it mingle for 5 minutes.
  5. Add jasmine rice, coconut milk, and chicken broth, stirring well.
  6. Bring to a boil, then cover and reduce heat to low, simmering for 20 minutes.
  7. Turn off the heat and let sit for 5 minutes before fluffing the rice and serving.
  8. Garnish with green onions, sesame seeds, and fresh herbs.
