Description
A hearty, creamy one-pot ham and potato soup perfect for family dinners.
Ingredients
2 tbsp butter
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 cups potatoes, peeled & cubed
2 cups cooked ham, diced
4 cups chicken broth
1 cup milk or cream
2 tbsp flour (optional, for thickening)
Salt & pepper, to taste
Fresh parsley, chopped
Instructions
1. Melt butter in pot and sauté onion, carrots, and celery.
2. Add potatoes, ham, and broth. Simmer until potatoes are tender.
3. Whisk flour into milk and stir into soup to thicken.
4. Season with salt and pepper.
5. Garnish with parsley and serve warm.
Notes
Use leftover ham for extra flavor.
Add cheddar cheese for a cheesy version.
Swap chicken broth for vegetable broth if preferred.
