- 1 lb smoked sausage (Andouille recommended)
- 12 oz penne or fusilli pasta
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth (low-sodium if preferred)
- 1 cup heavy cream
- 2 teaspoons Creole seasoning
- ½ cup grated Parmesan cheese
- Olive oil (for sautéing)
- Red pepper flakes (optional, to taste)
- Fresh parsley (for garnish, optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage and brown for about 4-5 minutes.
- Add the chopped onion and bell peppers to the pot; sauté until soft, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the pasta, chicken broth, and Creole seasoning; stir to combine. Bring to a boil, then reduce heat, cover, and let simmer until the pasta is al dente, around 10-12 minutes.
- Once the pasta is cooked, stir in the heavy cream and Parmesan cheese until creamy and well combined. Taste and season with salt, pepper, or additional Creole seasoning if desired. Garnish with chopped parsley and extra cheese if desired.
Notes
For added spice, include red pepper flakes. This dish keeps well in the fridge for 3-4 days. Reheat with a splash of water or broth to restore creaminess.
