- 4 cups Chicken Broth
- 2 Celery Stalks, chopped
- 2 Carrots, chopped
- 1 Onion, chopped
- 1 package Dumpling Mix
- 2 Bay Leaves
- 1 tsp Thyme
- Salt and Pepper to taste
- 1 cup Frozen Peas (optional)
- 2 cloves Garlic, minced (optional)
Instructions
- Sauté the Chicken: Heat oil in a large pot over medium heat, add chicken thighs and brown them. Set aside.
- Make the Base: In the same pot, add chopped onions, carrots, and celery. Sauté until soft and onions are translucent.
- Add Broth and Chicken: Pour in chicken broth, add chicken thighs, bay leaves, and thyme. Bring to a boil, then reduce to simmer.
- Dumplings to the Rescue: Prepare dumpling mix as per package instructions. Drop spoonfuls into the simmering broth.
- Cook It All Together: Cover and simmer for about 15 minutes.
- Serve and Enjoy: Remove bay leaves, stir, and serve in bowls topped with fresh herbs.
Notes
