- 1 lb ground beef (or turkey)
- 1 cup uncooked long-grain rice
- 1 can diced tomatoes (14.5 oz)
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp dried dill
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- Optional: Chopped bell peppers
- Olive oil for sautéing
- Optional toppings: Feta cheese or yogurt
Instructions
- In a large skillet, heat about 2 tablespoons of olive oil over medium heat.
- Toss in the diced onion and minced garlic. Sauté until the onion is translucent, about 3 minutes.
- Add the ground beef (or turkey) and cook until browned, about 5-7 minutes.
- Add in the diced tomatoes, rice, vegetable broth, salt, black pepper, cumin, paprika, and dried dill. Stir well.
- Bring the mixture to a gentle boil. Reduce the heat, cover, and let it simmer for about 20 minutes.
- Remove the cover and stir in the fresh parsley and lemon juice. Add chopped bell peppers if desired.
- Serve hot, with optional toppings of feta cheese or yogurt.
Notes
Feel free to adjust the seasoning and try different grains or proteins. This dish can be made ahead of time and tastes even better as leftovers.
