- 1 cup bell peppers, diced
- 1/2 cup red onion, diced
- 1/2 cup olives, sliced
- 1 cup mozzarella pearls or grated Parmesan
- 1 cup olive oil
- 1/3 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 1 clove garlic, minced
- Salt and pepper to taste
- Italian seasoning (a pinch)
Instructions
- Cook the rotini pasta until al dente, then drain and rinse with cold water.
- Chop the bell peppers and onions into bite-sized pieces.
- In a large bowl, combine the cooked pasta, diced veggies, cheese, and olives.
- Drizzle the homemade Italian dressing over the salad and toss until well combined.
- Let the salad chill in the fridge for at least 30 minutes before serving.
