Description

A delicious and refreshing pasta salad inspired by Olive Garden, featuring rotini pasta, colorful vegetables, and a homemade Italian dressing.


Ingredients

  • 1 cup bell peppers, diced
  • 1/2 cup red onion, diced
  • 1/2 cup olives, sliced
  • 1 cup mozzarella pearls or grated Parmesan
  • 1 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar

Instructions

  1. Cook the rotini pasta until al dente, then drain and rinse with cold water.
