A delicious and easy pasta salad that mimics the Olive Garden version, perfect for any gathering or a simple meal.
Ingredients

- 12 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1/2 cup black olives, sliced
- 1/2 cup pepperoncini peppers, sliced
- 8 oz mozzarella balls
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp Italian seasoning
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Boil a pot of salted water and cook rotini according to package instructions until al dente (about 8-10 minutes).
- Drain pasta and rinse with cold water; set aside in a large bowl.
- Chop cherry tomatoes, dice cucumbers, and slice red onion.
- In the bowl with pasta, add chopped veggies, black olives, pepperoncini peppers, and mozzarella balls.
- In a separate bowl, whisk together olive oil, red wine vinegar, Italian seasoning, Parmesan, salt, and pepper.
- Pour the dressing over the salad and toss until well coated.
- Cover the bowl with plastic wrap and chill in the fridge for at least 30 minutes.
- Serve and enjoy your pasta salad!
Notes
This pasta salad can be made ahead of time for meal prep and tastes even better the longer it sits. Feel free to customize the ingredients to your liking!
